Chef Rick resides in Rio Rancho, NM, and is an International/Cultural Chef with a specialty in historic flavor profiles. This means he has researched the origins of flavors from various time periods, cultures, populations, and regions. He has recreated original dishes and created new dishes to sustain their existence. Many ancient flavor profiles have changed and have been molded into forms that we are familiar with today. But it is the generational, original, and lost flavors that Chef Rick has devoted his cooking to over the years. Considering historic cultures, politics, population movements, wars, food, plants available at various times in history, and many other aspects, Chef Rick has been able to recreate many flavors, dishes, and spice blends. He is certified by the International World Association of Chef Societies. Since becoming disabled in 2017, Chef Rick has produced many of the historical flavors for the consumer market.
